(1) To verify the conformity of honey with the compositional
characteristics established by Italian Legislative Decree no. 179 of 21
May 2004 (Official Gazette no. 168 of 20.07.04), the following parameters
are analysed: Sugars (sum of glucose and fructose, sucrose), Water, Water-insoluble
Substances, Electrical Conductivity, Free Acidity, Diastase Activity and
Hydroxymethylfurfural (HMF). For this purpose the official test methods
described in the Ministerial Decree of 21 July 2003 (Official Gazette no.
185 of 11.08.03) are used.
